Delicious Summer Shrub Recipes to Enjoy!

Summer is here, and with it the sunshine and hot weather! It’s the time of year where relaxing in the shade of the back yard or patio is dreamy, as we hide from the heat with cold drinks and snacks. 

We love using shrubs to mix it up with our favourite flavours, creating adult or non-alcoholic refreshing drinks. Shrubs are a sweetened vinegar-based syrup that has been infused with fruit juice, herbs and spices. These explode with flavour!! We are especially partial to the Thirsty Whale Elixirs collection of shrubs, hand-crafted in Vancouver BC using local friends, organic cider vinegar, cane sugar and a variety of herbs and spices.

Pour these ingredients over ice and mint leaves.

  • 3/4 oz Strawberry Rhubarb Shrub
  • 1-2 oz White Rum
  • 1-2 oz Soda Water

Prickly Pear

Muddle, shake and pour over crushed ice:

  • 3/4 oz Pear Thyme Shub
  • 2 oz Rye
  • 2 slices Jalapeno
  • 1/2 Lime Juice
  • 1/4 Orange Juice
  • Thyme Sprigs for Garnish

Non-Alcoholic “Negroni”

  • 1 ½ oz pomegranate juice
  • ¾ oz cranberry ginger shrub
  • ½ oz lemon juice
  • 1 oz orange juice
  • 2 oz sparkling water

Non-Alcoholic Apple “Daiquiri”

  • 1 whole organic kiwi peeled and diced
  •  1 oz apple spice shrub
  • ½ oz lime juice
  • 2 oz ginger beer (or other nonalcoholic ginger beer of choice)
  • crystallized ginger and kiwi slice

Combine shrub, kiwi and lime juice in blender until smooth. Pour over crushed ice in a tall glass and top with ginger beer. Garnish with crystallized ginger and kiwi slice.
